Instructions

  1. Preheat the oven to 160°C fan / 180°C conventional. Grease a deep, approximately 1.5-litre ovenproof baking dish with butter.
  2. Mix the flour, cocoa powder, caster sugar and salt in a bowl.
  3. In a jug, whisk together the melted butter, milk, egg and vanilla. Pour into the dry ingredients and stir until just combined.
  4. Spoon the batter into the prepared dish and level the surface.
  5. Mix the brown sugar and remaining cocoa powder together, breaking up any lumps. Sprinkle evenly over the batter.
  6. Slowly pour the just-boiled water over the back of a large spoon onto the topping. Do not stir — the spoon helps prevent the water digging into the sponge.
  7. Bake for 30–35 minutes, until the top looks set and the sponge feels springy when gently touched. There should still be liquid sauce underneath, so don’t wait for a skewer to come out completely dry.
  8. Leave to stand for 5 minutes, then spoon into bowls, scooping right down to the bottom for the sauce. Serve warm with vanilla ice cream or cream.
  9. Serve promptly, as the sponge absorbs more sauce as it stands.
