Brown Butter & Chocolate Chip Cookies

Rich, nutty brown butter cookies filled with delicious chunks of milk chocolate. In my book Sweet, you’ll find what I consider to be the ultimate tried-and-tested Chocolate Chip Cookie—a guaranteed crowd-pleaser! But I kept seeing brown butter cookies and had to create my own version. I don’t think you’ll be disappointed.

  • 1 medium egg
  • 1 medium egg yolk

Instructions

  1. Melt the butter in a saucepan over a medium heat. It will become clear, then foamy, before brown specks appear at the bottom. Once it smells wonderfully nutty, remove it from the heat.
  2. Pour the brown butter, including all those delicious dark, nutty bits, into a separate bowl and allow it to cool completely.
  3. Add the light brown sugar, caster sugar, egg, egg yolk and vanilla extract to a large bowl and stir together. Pour in the cooled brown butter and mix well.
  4. Add the flour, bicarbonate of soda, baking powder and salt, then stir through the dough
  5. Chop the chocolate into chunks and stir through the dough.
  6. Place the dough onto a sheet of baking parchment and shape it into a smooth, even log. Wrap it in the parchment and refrigerate for at least 2 hours, or ideally overnight, to allow that gorgeous brown-butter flavour to fully develop.
  7. Preheat your fan-assisted oven to 180°C. Slice the chilled dough into 12 equal portions and roll each one into a ball.
  8. Arrange the cookies well apart on a lined baking tray—I bake four at a time—and bake for 12–14 minutes.
  9. Allow the cookies to cool on the tray before tucking in. Enjoy!
